Quick and Easy Butter Chicken
Delight in succulent chicken thighs enveloped in a rich, spiced tomato cream sauce. Ready in under 40 minutes, it's the perfect quick and satisfying weeknight meal.
Ingredients:
- 1.5 lbs (about 700g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 cup tomato puree
- 1/2 cup plain yogurt
- 3 tablespoons butter
- 2 tablespoons vegetable oil
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 1/2 teaspoon chili powder (adjust to taste)
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup heavy cream
- Fresh cilantro, chopped (for garnish)
Directions:
- In a large pan, heat oil and 2 tablespoons of butter over medium heat.
- Add chopped onions and cook until they become translucent.
- Add minced garlic and grated ginger, sauté for about 1-2 minutes until fragrant.
- Add garam masala, ground cumin, ground coriander, turmeric powder, chili powder, paprika, salt, and pepper. Stir well to combine.
- Add tomato puree to the pan and cook for 5-7 minutes, allowing the mixture to thicken.
- Add chicken thighs to the pan, coating them with the sauce. Cook for 8-10 minutes or until the chicken is cooked through.
