Toasted Tortilla Shrimp Cups

  1. Preheat oven to 350
  2. Prepare your shrimp according to package instructions. Season with salt, pepper, and a squeeze of fesh lemon. Set aside.
  3. Place tortilla piece in each cup of a muffin tin and push down so it creates a cup shape .
  4. Bake for 7-10 minutes or until crisp
  5. Assemble the cups by placing a spoonful of the shrimp, salsa, and guacamole in the toasted cup.
  6. Sprinkle with cheddar cheese and broil until melted, approximately 2 minutes
  7. Serve with and enjoy
